SOURCE: IGP Vi de la Terra de Mallorca.
TYPE OF WINE: Red wine aged in barrels.
VARIETIES: Cabernet Sauvignon, Merlot and Petit Verdot.
HARVEST: The summer of 2012 was dry and hot, perfect for the ripening and perfect state of health of the berries.
ALCOHOL CONTENT: 15% vol.
ELABORATION PROCESS: The bunches were selected and harvested by hand in the vineyards near the winery in Porreres (Mallorca – Balearic Islands). Traditional methods without added yeast or bacteria were used respecting the defined rules of Demeter International. Spontaneous fermentation at controlled temperature took place in stainless steel tanks and aging in French oak barrels of 225 liters each for a period of 12 to 15 months.
SENSORY ANALYSIS:
– Visual Phase: Brick red with violet touches in the middle layer. Medium-high intensity.
– Olfactory Phase: Aromas of ripe fruit emerge on the nose, as well as a slightly spicy troque (typical of French oak barrels) and slightly toasted.
– Gustatory phase: The perfect balance of the wine is confirmed on the palate, with concentrated aromas of ripe black fruits, supported by an integrated structure of tannins and a well-balanced acidity. The perfect integration of the barrel in the aging is confirmed.
Serving temperature: 15-17ᵒ approximately.
Pairing and harmony: White and red meats, stews and cheeses. Chocolate desserts.
