Bullfish Rosé 2021

SOURCE: IGP Vi de la Terra de Mallorca.

TYPE OF WINE: Young rosé wine.

VARIETIES: Merlot.

HARVEST: 2021. The Merlot was harvested the first week of September. All the grapes were in optimal conditions for the harvest, since it was a year of mild temperatures and no rainfall at harvest time.

ALCOHOL CONTENT: 14% vol.

ELABORATION PROCESS: Grape selected and picked by hand in vineyards located in Porreres (Mallorca – Balearic Islands). Traditional production methods, without the addition of yeasts or bacteria (according to conditions defined by DEMETER INTERNATIONAL). Spontaneous fermentation and vinification took place in stainless steel tanks.

SENSORY ANALYSIS:

Visual Phase: Frank, bright, pale pinkish style “provencal”, onion skin. Tearing can be seen in the cup.

Olfactory Phase: Very high intensity, aromas of ripe strawberry.

Gustatory phase: It is a fresh and balanced wine.

Serving temperature: 8-10 ᵒ approximately.

Pairing and harmony: Fish, pasta and rice. also like appetizer.
