Merlot 2018

TYPE OF WINE: Red wine aged in French oak

GRAPE VARIETIES: Merlot 100%

HARVEST: 2018 the summer was dry and mild, perfect for the phytosanitary conditions of the grape. The Merlot was harvested the second week of September.

Alcoholic degree: 14% vol.

PROCESS: The grapes were selected and harvested by hand in vineyards close to the property. Traditional methods were used in accordance with Demeter legislation with no added yeast or bacteria and only spontaneous fermentation. Fermentation at controlled temperature was done in stainless steel tanks and aging in French oak barrels for 12 months.

SENSORY ANALYSIS

Visual: Brick red with violet tones. Very high intensity. wide coat

Nose: On the nose, aromas of ripe red fruit are perceived with hints of wood provided by its time in the barrel.

Mouth: The palate has a good alcohol-acidity balance, a full-bodied and structured wine, but fresh at the same time. It is silky, round, with a good mid palate and a pleasant finish.

Serving temperature: 15 – 17 ᵒ approximately.

Pairing and harmony: Game meat and poultry, including fish. Also pasta and rice.
